“Blender Gazpacho”
2 cups tomato juice
1 cup peeled & chopped tomatoes
½ cup finely-chopped green pepper
½ cup finely-chopped celery
½ cup finely-chopped cucumbers
¼ cup finely-chopped onions
2 T. fresh parsley
1 clove garlic, minced
2-3 T. wine vinegar
1 tsp. Worcestershire sauce
2 T. olive oil
¼ tsp. pepper
Tabasco to taste


Garnish with:
Homemade croutons
2 avocadoes- peeled and diced
Crabmeat


“Homemade Croutons”
Dice 4 slices of bread.
Sauté some garlic cloves in olive oil until very hot

Directions:
Directions:
To make Blender Gazpacho, blend all 13 ingredients together in blender. Chill for several hours until ready to serve. Serve in chilled bowls.

To make homemade croutons: Add some bread cubes- stir quickly and brown on all sides. Remove with slotted spoon and drain in paper towels. Repeat until all bread cubes are browned.
