2# Rice - Cooked (do note Uncle Ben's)
....Allow to cool (do not use converted rice)
3/4# Italian Sausage /Skin removed
1 onion, large, sliced
2 cloves garlic /sliced
Red Pepper /a pinch
1/4 t Cumin seasoning
1 or 2 T Tomato sauce
2 c Romano Cheese
8 eggs
Black pepper to taste
Salt to taste (be careful, Cheese is salty!).
Mozzarella cheese
Bread Crumbs
Mazola Corn Oil (for frying)

Saute Onion and Garlic
Add Meat, Red pepper and Cumin Seasoning.
When meat is no longer pink, add tomato sauce and cook two more minutes. (this will be your filling)
Mix cooked rice with Romano Cheese, eggs, salt & pepper

Dip hands into cold water, shake to remove excess and put a heaping tablespoon of the cold rice in the palm of your hand. Add a heaping teaspoon of the meat mixture, and some mozzarella cheese into the center of the rice.
Cover with another tablespoon of rice. Shape into a ball of 2-3". Continue the same way until all rice and fillings are use. Set each ball on wax paper as it is shaped and dampen hands with cold water before starting each one. Roll Balls in Italian bread crumbs. Fry in deep fryer (or pot) 400º for about 5 minutes or until golden brown. Can be frozen and warmed in Microwave. Best served Hot.

This came from our friends The Aprile's. It was an old family recipe. Time consuming, but well worth it!!
Recipe can be halved.
