2 ripe avocados
1/2 small red onion, minced
3 tablespoons (roughly) chopped cilantro
6 tablespoons olive oil (or less)
1/2 - 1 jalapeno chili, roasted, seeded, and minced
3 scallions, minced (white part + 2" of green)
2 tablespoons rice vinegar OR lime juice
Kosher or sea salt and fresh ground pepper
1 Roma tomato, seeded and chopped (optional)

Cut avocado in half. Remove the seed, make dice-sized crisscrosses in the avocado flesh with a knife and scoop out the avocado with a spoon. Put in a bowl and add the chili, onion, scallions, and cilantro. Whisk together the vinegar (or lime juice) and oil in a bowl. Add salt and pepper to taste. Mix very gently with avocado.

Serve with Three Cheese Quesadillas or anything else.

This recipe is from the Fog City Diner Cookbook and is delicious. I usually like to add a little chopped Roma tomato (seeded) for color.
