1/2 cup olive oil
4 T lemon juice
4 cloves garlic, minced
2 T chopped parsley
2 T chopped fresh mint leaves OR chopped fresh basil (I use basil)
1 tsp salt
1/2 tsp pepper
4 boneless skinless chicken breasts, cut into cubes (I use 2 chicken breasts and then also a good size steak, so we have both meats.)
16 small mushrooms
green and red peppers cut into pieces
ren onion, cubed
baby red potatoes
skewers (if you are using wood skewers, soke them for 15 minutes right before assembly)

Combine oil, lemon juice and seasonings in a large Ziploc bag. Add chicken (and steak) and marinate for several hours. ( I usually marinade my veggies too, but that's a personal preference) Skewer meat pieces alternately with veggies. Broil or grill kabobs 10-15 minutes, brushing with marinade. Bring reserved marinade to a boil and serve with kabobs if desired.

** The canned baby potatoes work really well for kabobs, and you can thread them right on. If you want to use fresh Baby Reds, you need to microwave them for a few minutes to start the cooking process. Otherwise, they won't be ready when the meat is finished cooking.

** I have also added shrimp to these for special occasions. They are wonderful.

** Be experimental with kabobs. You can add just about anything. Grape tomatoes are wonderful, as are several different fruits, pineapple being one of my favorite. Even chunks of bread, (rosemary or sourdough is wonderful). It toasts the bread and absorbes some of the flavors of the marinade.

One thing I really like about these is I can make them individualized for each child, depending on what they like. I usually don't feel the need to serve much else with these, but a rice pilaf or salad goes well, and of course, Bread!
