"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
8 slices white bread (crusts removed)
butter (softened)
1 1/2 lbs. sharp cheddar
1 T. brown sugar
cheese (shredded)
1/4 tsp. paprika
1 tsp. dry mustard
1/2 tsp. salt
2 dashes cayenne pepper
2 1/2 c. milk
1 medium onion (finely diced)
2 dashes Worcestershire sauce
6 eggs slightly beaten

Directions:
Directions:
Butter each slice of bread and dice into cubes. Arrange half of the cubes into the bottom of a greased 9" x 13" casserole dish. Cover with half of the cheese and repeat layers.

Combine remaining ingredients in a bowl and blend well. Pour this mixture over the bread and cheese layers. If there is not enough milk to barely see around the edges, add a bit more to moisten.

Cover with foil and refrigerate overnight. Let stand for one hour before baking. Bake for one hour at 300º F or until browned and puffed like a soufflé.
