3 1/2 Cups Grits
3 1/2 Qts. Boiling Water
4 Tsp. Salt
1 1/2 Cups Chopped Onion
1 1/2 Cup Chopped Green Pepper
4 Lbs. Ground Beef
6 1/2 Cups Drained Canned Tomatoes
6 Cups Whole Kernel Corn
4 Tsp. Salt
5 Tbsp. Chili Powder
12 Oz. Grated Cheddar Cheese

Directions:

Add grits to boiling water with 4 tsp. salt added. Cook at medium heat until thick. Cover over medium heat till onion is tender and meat is browned. Add drained canned tomatoes, whole kernel corn, 4 tsp. salt, and chili powder to the meat mixture. Cook for 15 minutes. Line greased baking pan (or pans) with half of the grits, then all of meat mixture. Cover with remaining grits. Sprinkle top with grated Cheddar cheese. Bake at 375º for 20 minutes or until brown. Cut into squares.
