2 (15 oz.) cans of either black-eyed peas or black beans, drained and rinsed

2 (15 oz.) cans of shoepeg corn, drained and rinsed

1 (15 oz.) can artichoke hearts, drained and finely chopped

1 red bell pepper, seeded and diced

4 green onions (tops included), finely chopped

1/2 tsp. salt

1/2 tsp. black pepper

1 Tbs. finely chopped fresh parsley

1 Bottle of either Hendrickson's sweet vinegar and olive oil dressing, or Newman's Own Olive oil and vinegar dressing

Mix all the ingredients and allow to marinate for at least 8 hours. Serve as a side dish with grilled meat, fish, or poultry or as an appetizer with tortilla chips, corn chips or seasoned pita chips.
