1 Asado pejerrey
2 kilos de cebolla cortada a la juliana
sal al gusto
1 chta. de pimienta
1/2 chta. de tomillo
2 Chdas. de ajo picadito
1/2 chta. de comino
1/2 taza de vinagre tinto
1/2 taza de vino tinto
aceite vegetal
aceite de oliva
250 grs. de champignones

Directions:
Limpiar el asado, hincarlo y dejarlo macerar por 24 horas con sal, pimienta, comino, tomillo, ajos, vinagre y vino. Rociarle un chorro de aceite de oliva. Tapar y refrigerar, dándole vueltas de vez en cuando para que se impregne por todos lados de la maceración.

Calentar el aceite en una olla y dorar bien el asado. Retirar la carne y ahí mismo dorar la cebolla. Colocar el asado al centro y agregarle el jugo de la maceración. Tapar y cocinar a fuego lento por unas 2 1/2 horas aproximadamente o hasta que la carne esté suave.

Cuando esté a medio cocer, agregarle los champignones cortados en láminas.
