S'more Sundaes Recipe

6 tbsp butter
1/4 c packed light brown sugar
1 tsp vanilla
1/4 tsp ground cinnamon
1/8 tsp salt
2/3 c all-purpose flour
1/4 c graham cracker crumbs
1/2 c pink or white mini marshmallows
1-1/2 pts strawberry ice cream
Dark choc. ice cream topping

Directions:
Directions:
1. Preheat oven to 375º.
For shortbread, in med. saucepan melt the butter.
Remove pan from heat and stir in brown sugar, vanilla, cinnamon and salt.
Stir in flour and graham cracker crumbs.
Pat dough evenly onto bottom of ungreased 8X8X2 baking pan.
Bake about 12 min. until edges are firm.
Remove from oven.
2. Preheat broiler. Arrange marshmallows evenly across top of hot shortbread.
(OR) you could skip this process and just use graham crackers.
Broil 4 min. from heat about 45-60 seconds or until marshmallows are soft and golden brown. *Watch carefully to prevent burning*
Cool slightly.
Cut into 16 3X1 in. rectangles.
3. For the sundaes, scoop ice cream among 8 dessert dishes.
Tuck 2 short bread strips (or graham crackers) into each dish.
Serve with Dark choc. ice cream topping.
