1/3 cup raisins
1 cup hot, strong brewed coffee
2 1/2 cups flour
1/2 cup plus 3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon
Kosher salt
1 cup milk
1/2 cup unsalted, melted butter
1 large egg
1 1/2 teaspoon vanilla
1 teaspoon instant espresso granules or instant coffee
1/2 cup chopped walnuts

Directions:
Directions:
In medium bowl, combine raisins and hot coffee. Steep 30 minutes. Strain out liquid. Set aside.

Preheat oven to 400º. Place paper liners in muffin cups.

In large bowl combine dry ingredients. In another bowl whisk together milk, butter, egg, and coffee granules until blended. Add to flour mixture along with raisins and nuts. Mix with a spatula until just blended. DO NOT OVER MIX. Spoon batter into 12 paper-lined muffin cups. Sprinkle with remaining 3 tablespoons sugar. Bake for 20-25 minutes. Serve warm.
