2 lg. baking potatoes, thinly sliced
2 onions thinly sliced
1/4 c minced parsley
3 tbsp all-purpose flour
1/4 tsp salt
1/4 tsp pepper
2 c hot skim milk
1/3 c shredded reduced fat cheddar cheese

Directions:
Directions:
Preheat oven to 350º.
Spray 10X6 baking pan with nonstick spray.
Arrange 1/3 of potatoes and onions in bottom of pan.
Sprinkle evenly with half of parsley and flour.
Repeat layering once more ending with potatoes and onions.
Sprinkle evenly with salt and pepper.
Pour milk over all and sprinkle with cheese.
Bake until potatoes are tender and top is browned, about 1 hr. and 10 min.
