CAKE:
1 1/2 cups oil
3 eggs
2 cups white sugar
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla
3 cups diced apples
1 cup raisins

GLAZE:
1/2 cup buttermilk
1/2 cup (1 stick) butter
1 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon baking soda

Directions:

CAKE:
Blend oil, sugar, eggs, salt, soda and vanilla. Add flour, reserving enough to coat other ingredients. Fold in floured apples and raisins. Bake in greased tube pan at 325º for 1 hour 45 minutes.

GLAZE:
Place all ingredients in saucepan. Boil rapidly for two minutes. Pour over cake while still in pan. Let stand overnight. Run knife around edge of pan and tube. Glaze must soak into cake before removing from pan.
