2 beaten eggs
1 cup flour
Dash of salt
Milk
1 teaspoon shortening

Must have a black iron skillet!

Directions:
Directions:
Beat eggs, add 1 cup flour and dash of salt. Add milk until it runs like eggnog. Mixture must be very thin so that it curls immediately upon hitting the hot shortening in the black iron skillet.

Add shortening to a black iron skillet. Make sure that shortening is very hot before adding the batter. Slowly add a small ladle-full of batter to the hot skillet. Batter will curl around the edges. Serve with Maine maple syrup.
