4 boneless, skinless chicken breasts
1 pkg frozen chopped spinach, thawed & drained
1 Tbsp Parmesan cheese
1 oz. shredded mozzarella cheese
1 Tbsp chopped ham
1 tsp white peppper
SAUCE:
1 Tbsp butter
1 cup madiera wine
1/4 tsp white pepper
1 1/2 cups chicken stock
1/2 cup diced mushrooms
1 egg, whisked with 1 tsp water
flour for dredging

Directions:
Directions:
Thoroughly mix spinach, parmesan, and mozzarella and chopped ham. Place equal portions on two of the chicken breasts. Place the other breasts on top, and pound the edges together. Dip into egg-wash, and then dredge in flour. Brown on both sides, in oil. Drain the excess oil, and add the sauce ingredients. Saute for 5 minutes. Serve over your favorite pasta, and spoon sauce over.
