Pumpkin Waffles with Buttermilk Syrup Recipe

Ingredients:  
2 c flour
2 T baking powder
1 T cinnamon
1 T sugar
1/2 t nutmeg
1/4 t coriander
1/4 t salt

Mix above ingredients then add:

4 egg yolks
1 1/2 c milk
1 c pumpkin
3/4 c. butter, melted of very solf
1 T vanilla

Beat the 4 egg whites until stiff peaks form. Fold in. Bake in preheated waffle iron and serve with buttermilk syrup.

Buttermilk Syrup (this tastes like caramel)

1/4 c butter
1/2 c buttermilk
1 c sugar
1 t corn syrup

Bring to a boil and take off heat. Add 1 tsp baking soda and 1 tsp vanilla. It will bubble up quite a bit, so make sure you use a larger pan. Stir until it settles.
