2 Tomatoes, peeled and roughly chopped
1 Tbl. Olive oil
1 tsp garlic
2 Tbls.finely chopped shallots
¼ jalapeño pepper, seeded and finely diced
8 oz. vegetable stock
Salt and pepper to taste
2 tbls. Heavy cream

Directions:
Directions:
In 2-qt. saucepan over medium low heat, heat olive oil add the garlic, shallot and jalapeño pepper and cook without browning for 2 minutes. Now add tomatoes, and the vegetable stock. Simmer for 15 to 25 minutes. Puree the sauce. Just before serving add the heavy cream and adjust the seasonings to taste. Serve warm.
