4 boneless chicken breasts, pounded slightly
Salt and pepper for seasoning
Seasoning salt as desired
2 Tbls. Vegetable oil
1 recipe cheddar cheese grits (see recipe listed)
1 recipe spicy tomato sauce (see recipe listed)
1Tbls. butter
1 small zucchini cut into julienne
4 to 6 cherry tomatoes, halved
Salt and pepper to taste
Chiffinade of basil

Directions:
Directions:
Preheat oven to 385°F
Season chicken breasts with salt, pepper and seasoning salt as desired. In 10-inch sauté pan, heat oil over medium heat. Add breasts, presentation side down. Sauté to brown for 4 to 6 minutes, turn breasts over and place pan in oven. Finish cooking chicken in oven uncovered until internal temperature taken reads 165°F. Remove from oven and keep warm.
In Separate sauté pan heat butter and add zucchini. Sauté without adding color for 2 minutes until tender crisp. Remove from heat add cherry tomatoes and salt and pepper and chiffinade of basil; Keep warm.
Serve chicken breast with cheddar cheese grits, tomato sauce and sautéed vegetables. (see recipes)
