4 tlb. butter
1 egg
1 C. sugar
1 C. cranberries, chopped
1 C. chopped walnuts
2 C. flour (you can use whole wheat flour)
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda

Directions:
Directions:
Preheat oven to 325 degrees. Butter a loaf pan. Grate the rind of the orange and set aside; squeeze out all the juice into a measuring cup. Add enough boiling water to the juice to make 1/4 cup liquid. Add the orange rind and butter and stir to melt the butter. Beat the egg in another bowl and gradually add the sugar, beating well. Add remaining ingredients and orange mixture, and blend well.
Spoon batter into the loaf pan and bake fro 1 hour. Remove from the pan and cool on a rack.
