1 large head Romaine lettuce, chopped
1/2 bunch cilantro (optional)
1 1/2 c Romano cheese
Zaterain's black bean rice mix (prepared as directed)
2 cans black beans, rinsed
fresh lime slices (optional)
grilled chicken breasts
Avacado (optional)
Deep fried corn tortilla strips
Tomatillo dressing

Place the cooked rice on the bottom of the dish or flour tortillas. Layer the black beans on next. Place chicken cubes or slices next. Cover with lettuce. Place corn tortilla strips on top. Sprinkle generously with Tomans cheese. Add a few lime slices and cilantro and Avocado slices around bowl. Allow guests to pour their own dressing.

Chicken Garlic Lime Marinade

1/4 c olive oil
6 Tbsp Soy Sauce
1/4 c red wine vinegar
6 Tbsp Worcestershire sauce
juice from 2 fresh limes
1 tsp salt
1 1/2 tsp black pepper
cloves of crushed fresh garlic
6 boneless, skinless chicken breasts

In a large resealable bag, blend all ingredients. Place the chicken breasts in and shake. Marinate for 6 hours. Try not to leave in longer as the citrus juice will toughen the chicken. Rotate the bag ofter to get good coverage of the chicken.


Rosie's Tomatillo Dressing

1 hot pepper
2 medium tomatillos, cut into bite size pieces
1/2 bunch fresh Cilantro
Juice from 1 fresh lime
3/4 jar ranch dressing (Kraft Peppercorn is best!)
salt to taste

Pour ranch dressing into blender. Add the tomatillo pieces and cilantro. Blend on high for about 1 minute or until the sauce is smooth. Pour in the lime juice and blend again. Add part of the chili pepper and blend again. Taste for spiciness. Add more chili pepper to taste and blend. Salt to taste. Refrigerate several hours before serving.
