2- 6 oz. jars of artichoke hearts
1 onion chopped
1 garlic clove finely minced
4 lg. eggs lightly beaten
1/4 c. fine breadcrumbs
1/2 tsp. salt
1/2 tsp. dried basil or oregano
1/4 tsp. freshly ground peper
2 c. shredded mozzarella cheese

Directions:
Drain artichoke hearts reserving liquid from one jar
Finely chop artichoke hearts and set aside.
Saute onion and garlic in reserved liquid in a large skillet over med. heat until tender, and set aside.
In a medium bowl whisk together eggs, breadcrumbs, salt, basil, and pepper. Add chopped artichokes, onion mixture and cheese. Stir well and pour into a lightly greased 11x7 dish.
Bake uncovered at 325 degrees for 25 to 30 minutes or until set. Makes 35 to 40 squares that may be served warm or cool.
