10 to 12 small new potatos, leave skin on (these are about the size of an egg)
4 eggs
4 heaping T of Hellmans Mayo (do not use fat free)
Salt to taste and a lot of black pepper

Directions:
Directions:
Quarter potatos, put them along with the eggs in a pot of water and bring to boil until done (fork tender)
Drain, put back in pan. Salt and pepper right away while still hot. Peel eggs, dice and add to pan. Stir in mayo. Serve warm.

This sounds to plain...but I have been making potato salad this way for years and is still one of the dishes that is requested by family members when they come to visit. The key is to have 2 part potato to 1 part egg and a lot of black pepper. I have tried this with other mayo besides Hellmans and it just does not taste the same.
