3 Tbsp all purpose flour
1 tsp. salt
1/2 tsp. celery salt
1/4 tsp. garlic salt
1/4 t. pepper
1/2 tsp. ground ginger
3 lbs round roast, 2 inch cubes
2 Tbsp. bacon grease or oil
1-16 oz. can tomatoes
3 med. onions, sliced
1/3 c. red wine vinegar
1/2 c. molasses
7 med carrots, diagonal cut 1/2 to 3/4 in pieces
1/2 c. raisins
Hot cooked rice

Combine flour, salt, celery salt, garlic salt, pepper and ginger and sprinkle over beef. Brown in lg heavy kettle or dutch oven. Add tomatoes, sliced onions, vinegar, molasses and 1/2 c. water. Bring to boil, cover and simmer abt 2 hrs. Add carrots and raisins and simmer another 30 min. or until carrots are tender. Serve over hot, cooked rice. Corn bread and a green salad make good side dishes.
