1 1/2 lb. lean pork cut in strips
2 tbsp. shortening
1 chicken bouillon cube
1 lb. 4 oz can pineapple chunks
1/4 c. brown sugar
2 tbsp. cornstarch
1/4 c. vinegar
1 tbsp soy sauce
1 med. green pepper cut in strips
1/4 c. sliced onion
Hot cooked rice

Directions:
Brown pork in shortening. Add 1 c. water, bouillon cube, 1/4 tsp. salt; mix well cover and simmer till tenderabout 1 hr. Meanwhile drain pineapple, reserving syrup, combine brown sugar and cornstarch; add reserved pineapple syrup, vinegar, soy sauce and 1/2 tsp. salt. Cook and stir over med heat till thickened and bubbly. Remove from heat and add sauce to pork; mix well. Stir in pineapple, green peppers, and onion. Cook over low heat 2 to 3 minutes or till veggies are tender-crisp. Serve over rice.
