1/2 cup white sugar
1 1/2 tsp baking powder
1/4 tsp nutmeg
1/8 tsp salt
1 egg, slightly beaten
1/2 cup milk
`/3 cup butter- melted

Preheat oven to 350. Grease muffin cups or line with paper liners.

In a medium bowl, stir together flour, 1/2 cup sugar, baking powder, nutmeg and salt. Make a well in the center of the mixture. Stir together egg, milk and 1/3 cup melted butter. Add egg mixture to flour mixture; stir until just moistened (batter may be lumpy). Spoon batter into prepared muffin cups. Bake in preheated oven for 20-25 min. Meanwhile, combine cinnamon and sugar. When muffins are finished baking, dip tops of muffins in melted butter and then in cinn/sug mixture. Serve WARM.

The best thing to do with these muffins is to make them in a mini muffin tin instead of a regular size. Then there is more cinnamon sugar to go with your muffin and the kids love the size. I double this recipe because they go so fast, but I also make a few other adjustments. The nutmeg makes me think of apples, so I add about 1/2 cup of applesauce to the DOUBLED recipe. I also use 1 cup wheat flour with two cups white flour, again, for the doubled recipe.
