1-2 lb. hamburger
1 medium onion-chopped
1 can refried beans
2 cans enchilada sauce
velveeta cheese
soft taco shells

Directions:
Directions:
Pre-heat oven to 350'. Fry hamburger and onion in skillet. Drain Fat. Add can of refried beans. Mix well. Add 1 can of enchilada sauce. Mix well. Slice velveeta cheese into 1/2 slices(enough to fill each enchilado shell with one slice and to add on top). Fill each shell with 1-2 tbsp. of meat mixture and one "1/2" slice of cheese. Roll and put seam side down in 9x13 in. greased/sprayed baking dish. Once full, add 1 can of enchilada sauce on tope of enciladas. Top with remaining velveeta cheese slices. Cover with foil and cook for 30 min. Remove foil and cook 5-10 min. longer.
