1 egg
3 T Crisco or butter - melted
3 T sugar
1 1/2 C flour
3 T white wine
1 egg white
oil for frying

Filling:
1 lb container of whole milk ricotta
1/2 pt whipping cream
1 C chopped chocolate
1/2 C candied fruit (optional)
1 tsp vanilla
Powdered sugar to taste

Directions:
Directions:
Mix all together until a ball of dough forms. On floured pastry board, take small pieces of dough and roll into very thin oval shape. Wrap oval pastry around cannoli tube and seal seam with egg white. Heat oil in large pot until very hot and gently put cannoli tube into hot oil. Fry until golden brown. Dough will blister. When cool enough to handle, remove tube and store shells in airtight container.

Filling: Cream ricotta in mixer till smooth. In another bowl, whip the whipping cream and add vanilla and sugar. Fold whipped cream into ricotta and blend well. Add chocolate and candied fruit and mix well. Fill each cannoli shell with filling and dust top with powdered sugar. Add a small piece of maraschino cherry at each end of the cannoli, if desired.
