1/2 c. chopped celery
1/2 c. chopped onion
1/4 c. butter
6 c. dry bread crumbs
1 c. or more chopped oysters, according to taste
1 3/4 c. oyster liquor and milk
1 tsp. salt
1/8 tsp. pepper
1 tsp. poultry seasoning
2 beaten eggs
Sufficient broth

Directions:
Directions:
Cook celery and onion in butter til soft but not brown. Add crumbs and mix. Add seasonings,
oysters, eggs, oyster liquor, milk and broth. Mix well. Pour into 8 x 8 baking dish and brown, uncovered, in 350º oven. Take out of oven when it moves slightly when shaken.

This is Mom's recipe, but for the past 5 years or so Dave and I have been making this at our house and taking it to Mom & Dad's for Thanksgiving. Each year Dave wants to increase the number of oysters, and we usually double the recipe. Dad and he are the only ones in the family who eat the oyster dressing, but they really like it so they have lots left over. Everyone else enjoys the sage dressing.
