1 lb pork tenderloin, cut into 8 pieces
4 Tbsp butter, divided
3 Tbsp flour
1 cup chicken broth
1 cup milk
1/2 cup dry white wine
1/2 cup grated Parmesan cheese
1 3oz jar sliced mushrooms
salt and white pepper to taste
8 oz spaghetti or linguine
Boiling salted water
2 Tbsp fresh parsley, chopped

In saucepan, melt 2 Tbsp of the butter over medium high heat. Mix in flour, stirring. Stir in broth, milk and wine and cook stirring, until sauce is smooth and thickened. Stir in Parmesan cheese, mushrooms, salt and pepper to taste; set aside. Cook spaghetti in boiling salted water until al dente; drain. Press each piece of tenderloin medallions one inch thick. Heat 2 Tbsp butter in heavy skillet, cook medallions 3 - 4 minutes on each side. To serve; toss noodles with sauce, reserving 4 Tbsps of sauce, and place on serving platter. Place browned medallions atop noodles and garnish with remaining sauce and chopped parsley.
