Pumpkin Cookies Recipe

1/2 c. shortening
1 1/2 c. packed brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. mashed pumpkin
3/4 c. raisins or chocolate chips
1/2 c. nuts, chopped
2 1/2 c. flour
3/4 tsp. baking soda
2 tsp. baking powder
1/3 tsp. salt
1/2 tsp. ground ginger
1 tsp. ground cinnamon

Cream shortening and sugars until fluffy. Add eggs. Stirr in vanilla, pumpkin, raisins (or chocolate chips) and nuts. Sift dry ingredients together three times and then add to pumpkin mixture. Drop by teaspoons onto greased baking sheets. Bake at 375 degrees for 10 to 15 minutes.
