3 eggs
1 c. oil
1 c. sugar
3 tsp. vanilla
2 c. shredded zucchini – or replace w/bananas, persimmons, berries, etc

2 c. flour
1 ½ tsp. soda
½ tsp. baking powder
2 tsp. cinnamon
1 c. chopped walnuts (optional)

Directions:
Directions:
Cream together first four ingredients. Then add fruit (or zucchini) and mix well.

Add rest of ingredients. Spray 2 large or 4 small bread pans with cooking spray. Fill pans about 2/3 full. Bake ½ hour for small bread pans or 1 hour for regular size bread pans. Cool for 10 minutes. Tip loaves out onto cooling rack and air cool for 1 hour.
