2-3 pounds boneless fish cut in semi large chunks
1/2 large onion (diced)
3 large potatoes cut into pieces
1 pint all purpose cream
1 pint milk
Large chunk butter
1/4 teaspoon tarragon
1/4 teaspoon paprika
Salt and pepper to taste

Directions:
Directions:
Add only enough water to cook fish, onion, and potato. When potatoes are cooked, add cream, milk, butter, and spices. Bring to a boil, but do not let it boil. Turn off heat and let stand 3 hours or more. The longer it sits, the better it is.

Scallops, crab, and other seafood can be added.
