2 cups sugar
4 eggs
1 1/4 cup oil
2 Tbsp vanilla
3 tsp cinnamon
2 tsp baking soda
1 tsp salt
2 cups flour
3 cups grated carrots

Directions:
Directions:
Mix sugar, eggs, oil and vanilla in large bowl. Add sifted dry ingredients and carrots, mix well. Pour into buttered pan (9X12X2), bake at 350º for 35 to 40 minutes or if using a glass dish bake at 325º for 30 to 40 minutes. Frost with Cream Cheese Frosting.
