1 1/2 c. oil
2 c. sugar
2 eggs beaten
3 c. flour
1/4 c. water
1 t. soda
1 t. salt
1 t. cinnamon
1 t. vanilla
1 t. lemon extract
3 c. chopped apples
1 c. chopped nuts

Combine oil and sugar, beat in beaten eggs.
Combine flour, soda, salt and cinnamon and add to above mixture.
Add vanilla, lemon extract, apples and nuts.
Put in 9x13 greased pan or bundt pan and bake at 300 degrees for 1 hour or until done.

*Glaze while warm with 1 c. powdered sugar and juice of 2 lemons.
