2 cups Flour mixed with 1 tbsp baking powder
2 tsp Cinnamon
1-1/2 tsp Baking soda
1-1/3 cup Granulated sugar
4 large Eggs
1 cup Vegetable oil
2 cups Finely shredded carrots
1 cup Chopped nuts if desired

CREAM CHEESE ICING:
1 pkg Cream cheese, room temp 8 oz
2 cups Confectioners' Sugar
1 tsp Vanilla extract



Directions:
Directions:
Heat oven to 350. Grease 13x9 pan. Mix flour, cinnamon, and baking soda. In large bowl beat eggs, sugar and oil until blended (with spoon). Stir in flour mixture, then carrots and nuts. Pour in pan and bake 40-50 minutes till pick in center comes out clean. Cool in pan on rack. Spread with cream cheese icing. Cut in 12 rectangles.

Icing: Beat cream cheese till fluffy, beat in confectioners sugar and vanilla till smooth.

The BEST carrot cake ever.
