2 pounds Ground beef
1/2 cup Margarine
1/2 cup Flour
1-1/2 quarts Water
1 cup Onion, chopped
1 cup Carrot, chopped
1 cup Celery, chopped
1 pkg Frozen mixed vegetables, 10 oz
1 can Tomatoes, 28 oz, undrained and chopped
1 can Tomato sauce, 15 oz
2 tsp Pepper
1-1/2 tbsp Beef bouillon granules or equivalent
1-1/2 tsp Salt

Brown ground beef in large pot, drain and set aside. Melt butter in same pot. Add flour and cook over LOW heat 3-5 minutes until smooth and bubbly Gradually add water, stirring constantly. Add ground beef and remaining ingredients. Bring to boil, reduce heat and simmer uncovered for 1 hour.

This is very similar to Mom's "leftovers" soup.
Can add any canned vegetable desired - peas, corn, green beans, or leftovers. Tastes better the next day.
