Ingredients:
Ingredients:
1 bag cut and washed romaine
1 bag cut and washed spinach, (I used mixed greens)
1 small can mandarin oranges, drained
½ medium red onion thinly sliced, rings separated
4oz. bag chopped pecans
1 bottle Jamaican Mistake salad dressing

Directions:
Directions:
In a large bowl, combine first five ingredients. Then pour Jamaican Mistake salad dressing over lettuce mixture. Toss until greens are well coated with dressing. Serve immediately.

Hints:
*I leave the onions in rings instead of halving or chopping them. It gives the salad a more finished and professional look.
* If you toast the pecans in the oven (350° for about 10 mins) or in a pan on the top of the stove just until lightly brown, they taste nuttier and reach their full flavor. But if time is short, I just add them straight from the package.

Stir-fry veggies make a great side dish with this salad. This was a big hit served at our holiday family dinners.
