2 teaspoons canola oil
1 large onion, sliced
2 clove garlic, minced
1 medium head cabbage, cleaned and sliced (or cut into chunks)
2 stalks celery, sliced
2 cups diced broccoli (fresh or frozen)
1 cup grated carrots
3-4 tablespoons soy sauce
2 teaspoons toasted sesame oil

Directions:

In a large sauté pan over medium-high heat, add the canola oil and heat. Add the onion and garlic and sauté, stirring, for 1 minute. Add the cabbage, celery, broccoli, and carrots and cook until veggies are just starting to get tender, about 2-3 minutes.
Add the soy sauce and stir well and cook just until cabbage is wilted, about 3 minutes. (or until desired doneness of veggies is obtained)
Remove from heat and drizzle with the sesame oil.

I love stir fry veggies, and you can adjust the variety of vegetables to your preference. Very low in not only carbs, and fat, but calories, too.
