2 tarros de leche evaporada
2 tarros de agua
1 taza de azúcar (o más)
1 cucharadita de vainilla
100 grs. de maicena
4 yemas
1/3 taza de vino dulce
1 tajadita de mantequilla

En una olla poner el agua con la leche a calentar y una vez que levante el hervor agregarle el azúcar y dejar que hierva bien. Retirar del fuego y agregarle de golpe la maicena disuelta en leche y agua. Revolver bien y poner nuevamente a fuego lento a que cocine, moviéndolo bien.

Por separado batir las yemas y agregarles el oporto.

Echa la mantequilla a la crema y retirar del fuego. Añadirle las yemas con el oporto en forma de hilito revolviendo bien. Volver a colocar al fuego a que cocinen las yemas. Retirar del fuego y agregarle la vainilla.

Verter caliente en un molde de tubo acaramelado. Dejar enfriar y llevar al refrigerador por varias horas o desde la víspera.

Se sirve helado cortado en tajadas, bañadas con compota de albaricoques o de guindones.
