1 lb ground beef
1 medium onion, chopped
1 can (16-oz) stewed tomatoes
1 can (8-oz) tomato sauce
1 can (4-oz) chopped green chilies
1 pkg (1 1/4-oz) taco seasoning mix
12 corn tortillas
1 lb cheddar cheese, grated
Olives for garnish, optional
1/2 tsp lemon juice
1/4 tsp oregano leaves, crushed

Directions:
Directions:
Brown beef and onions in skillet. Add stewed tomatoes, tomato sauce, green chilies, seasoning mix, lemon juice and oregano leaves. Combine thoroughly and simmer 10 - 15 minutes. Place about 1/4 cup mixture in bottom of 9 x 13" baking dish. Place 2 tortillas side by side on meat mixture. Stack remaining tortillas topping each with meat mixture, and grated cheese. Bake for 20 - 25 minutes, or until cheese is bubbly. Cut each stack into quarters with a sharp knife before serving. Serves 4 - 6.

Mark's note: This recipe won the 1981 Beef Cook-Off contest in Great Falls. While in college, he was there to film the event, and they gave him the recipe.
