1 to 1.5 lb. chicken breasts
Pineapple chunks or tidbits
1 apple, cut into cubes
2 stalks of celery
about a handful of cashews
grapes, any color
1/2 lemon
Helman's mayo
about 2 Tbsp. sour cream
salt and pepper
a sprinkle of garlic
4 Tbsp. dried parsley
paprika

Optional: soak chicken in Kosher salt for 1 hour, then rinse before cooking. Bring chicken to a boil and simmer for 45 min. Dice chicken when cool. In a large bowl combine, chicken, pineapple, apple, celery, cashews, grapes, and lemon. In a separate bowl combine Helman's mayo and sour cream, mix well. Add the mayo and sour cream mixture to the other ingredients. Next, add salt and pepper to taste, then add garlic, parsley, and paprika.

This is a time consuming recipe, but it is the best chicken salad I have ever tasted. I got this recipe from a patient when I worked in physical therapy. Because this lady did not measure anything, all measurements are approximates. Once you
make this you will know what you want to add or take away. Also, it is important to use Helman's mayo.
