4 egg whites
1 c. sugar
1 tsp. vinegar
1/2 tsp. vanilla

Preheat oven to 275º. Whip egg whites in a clean non-greasy bowl till they form a soft peak. Gradually add sugar, vanilla and vinegar. Continue beating till very stiff. Spread egg mixture on a cookie sheet lined with parchment paper (brown paper works too).

This is enough batter for 12 individual meringues or 2-8 in. circles. Mixture will expand some during baking. Bake one hour. Then turn oven off leaving meringues inside to allow them to dry for several hours. Do NOT open oven door while drying. Serve with whipped cream and fresh fruit.
