1 cup sifted all-purpose flour
1 tbsp sugar
1 1/2 tsp baking powder
1/8 tsp salt
2 tbsp butter or margarine
1 egg
2 tbsp milk
1 3-oz pkg strawberry flavored gelatin
1/3 cup sugar
3 tbsp all-purpose flour
1 1/2 lb rhubarb, sliced (5 cups)
2/3 cup sugar
1/3 cup sifted all-purpose flour
3 tbsp butter or margarine
Vanilla ice cream

Directions:
Combine flour, sugar, baking powder and salt. Cut in the butter until mixture resembles coarse crumbs. Beat egg with milk; add to flour mixture. Stir till dry ingredients are moistened. Pat dough evenly on bottom and 1" up sides of 9 x 9" baking pan. Combine the gelatin, sugar and flour. Add to rhubarb and mix well; turn into crust-lined pan. Combine the remaining sugar and flour, cut in remaining butter till crumbly. Sprinkle evenly over rhubarb filling. Bake in 375º oven for 45 minutes or until rhubarb is tender and topping is lightly browned. Cool completely. Cut into squares; top each with vanilla ice cream. Makes 8 servings.
