rock salt
liquid smoke

Directions:
Directions:
Put roast on about 5 layers of aluminum foil. Cut two slits on top bottom and the sides of the roast. Put about 1/4 c. rock salt in the slits. (I like just a little bit more salt.) Pour about 1/3 to 1/2 bottle liquid smoke on the roast. Put the roast fatty side up and fold all the foil up one at a time around roast. Put roast on a cooking sheet lined with foil. Bake for 1 hour and 400º then put the temperature 300 º for a least 4 hours.
