1 cup finely cut dried apricots
1/2 cup hot water
2 1/2 cups flour
1 1/4 tsp soda
1 tsp salt
1/2 cup sugar
1/4 cup shortening
1/4 cup vinegar (mild) plus apricot water and milk to make 1 cup liquid
2 eggs, beaten
1/2 cup nuts, chopped

Directions:
Directions:
Soak apricots in water for 1 hour. Cut in flour, soda, salt, sugar and shortening. Add vinegar/water/milk, eggs and nuts. Bake in greased loaf pan, 350º, 1 hour. Let stand overnight.
