4 red bell peppers, seeded and quartered
(These may be chopped in a food processor)
1 large tomato, chopped
1 medium Vidalia or sweet yellow onion, diced
1 c. seasoned croutons, crushed
2 lbs. ground sirloin
1 c. grated mozzarella cheese
salt or seasoned salt to taste

1. Preheat oven to 350 degrees.
2. Quarter and remove insides/seeds from bell peppers so
that they form little "spoons" in which you will place the other
ingredients. Sprinkle with a little salt and set aside.
2. Brown sirloin in a large skillet. Drain grease.
3. Add the onion, tomato, croutons, and salt. Continue to
cook over medium heat for about 2 minutes or until beef is no
longer pink.
4. Remove from heat.
5. With a small spoon or spatula, pack generous amounts of
the beef mixture into each bell pepper quarter and place on a
baking dish with the "stuffed side" up. Make sure your stuffed
peppers don't overlap in the baking dish.
6. Sprinkle with mozzarella cheese, a bit more salt, and bake
for 30-40 minutes or until peppers are tender.
