1 lb. boudin
2 eggs
1/3 c. parmesan cheese, grated
Dried Bread crumbs (Italian style or plain)

Oil for frying

Directions:
Remove casing from boudin.Pinch off small bits of stuffing and roll into small balls.Dip balls in lightly beaten egg then, roll in a combination of paremesan cheese and bread crumbs.Deep fry and drain on paper towels.
