4 cups peeled apples
1/4 cup sugar
1/4 tsp cinnamon

Topping:
1 tbsp butter
1/2 cup sugar
1 egg, beaten
1 tsp vanilla
1/2 cup flour
1/2 tsp baking powder

Directions:
Directions:
Peel and slice apples. Place in well greased pan. Combine sugar and cinnamon, sprinkle over apples. Cover with foil and bake for 20 minutes. Remove from oven and cover with topping. For topping cream butter and sugar together thoroughly. Add egg and vanilla, then add flour and baking powder. Spread over apples. Return to oven for 20 - 25 minutes. Serve warm or cold.

Vivian's note: "I use canned apples and a 9" pie pan for the 2 of us--for a large number of people do in a flat pan. Good with whipped cream or ice cream. Good and very easy!"
