box of puff pastry, thawed (freezer section)
4 slices of salmon
pesto
1 tomato, cut into 4 pieces
honey
dijon mustard
dried parsley or fresh parsley, chopped

Directions:
Directions:
Preheat oven to 400ºF.
Line a baking tray with aluminium foil.
Place 4 slices of puff pastry and 4 pieces of salmon on the same baking tray.
Cook for 10-12 minutes, or until the salmon is done and pastries are cooked (they'll "puff" up).
Stack the rest of the ingredients on each dinner plate in this order:
Place puff pastry in center of plate,
spread pesto on the pastry,
add a slice of tomato,
top with salmon.
Mix equals parts of honey and dijon mustard in a small bowl. Spoon over salmon and then sprinkle parsley on top - enjoy!!
