9" Pie Crust
6 Large ripe tomatoes
1/2 to 3/4 cup mayonnaise
2 oz sharp cheddar cheese
4 T Basil
Salt and Pepper

Directions:
Directions:
Thaw crust. Slice tomatoes and drain on paper towels in
advance. Layer tomatoes, salt, pepper and basil until pie crust is
full. Top with mayonnaise, cheese and basil. Bake at 350º for 30
to 45 min. Let cool and serve.

I usually pat tomatoes with a paper towel. The tomatoes need to
be pretty dry so you don't have a soupy pie. I usually get a
frozen 9" pie crust at the store. You can also substitute any
cheese you like.
