4 Green Onion, finely chopped
5 oz cream cheese, room temp.
5 oz. ricotta or farmers's cheese
1 cup crumbled feta cheese, rinsed
1/2 cup grated Gruyere cheese
3 tablespoons minced fresh parsley
2 teaspoons fennel seed
1 egg, well beaten
12 phyllo pastry sheets (about 1/2 pound)
1/2 cup (1 stick) unslated butter melted with 1/2 cup olive oil
sesame seed

Directions:
Directions:
Combine onion, all cheeses, parsley and fennel seed in medium bowl an dmix well with fork. Blend in egg.
Fill phyllo pastry sheets and fold into trianbles, following technique for Kreatopetes.
Preheat oven to 350º F. Generously butter baking sheet. Arrange phyllo triangles on sheet. Brush generously with butter mixture and sprinkle with sesame seed. bake triangles 1 sheet at a time, brushing once with butter mixture halfway through baking time, until crisp and golden. 25-30 minutesss.

Put more filling in each one.

Can be assembled up to 2 days ahead and refrigerated, or frozen for several months. To bake directly from freezer, brush unthawed triangles with melted butter before cooking. Increase baking time by 15 minutes.
